Weekly Windup: Crusty Wheat Bread

This is so yummy! I love the extra wheaty-ness that the cereal gave it, it really is a must try!

I love baking on sudays and then having bread all week, this week this is being used for tuna on toast, ham sandwiches, and lots of poached eggs with toast (craving in a big way!). What would you use it for?

Combine 1 Tbs Honey and 1 1/2 C Warm water and then stir in 2 1/2 tsp yeast. Let sit until thick layer of foam forms.

In another bowl add 1 C hot water to 1 C Bran Flakes and 1/2 C Oatmeal. Let sit 5 min.

In a large mixing bowl, mix 4 C Wheat flour and 1 Tsp salt. Add in other two mixes. Mix until just combined. (Add warm water if it is not coming together, wheat flours tend to differ in their absorbance!)

Cover and let sit for 2 hours (I put mine in a warm oven), until doubled in size.

Turn onto floured board and form into round boule. Cover again and let sit another hour.

Slice any design you wish into the top, I just do a cross. Cover a baking sheet with parchment that has been lightly dusted with flower. Slide the bread onto the sheet. (It might have been easier to just let it rise on the sheet with the parchment…) Bake at 450 for 25 min, until a nice thick crust forms!

Cut into 16 slices, enjoy!

  1. I think I’m definitely going to make this recipe this weekend. I’m all out of bread and have been really wanting to make my own… I love that this recipe calls for flour, oats, and bran flakes. Can you taste the crunch in each slice?
