Made this because I was sorely missing this place. Good news- We just booked spring break 2013! Can’t believe this is my last one. I am definitely into the ‘savoring every last moment’ mode about everything having to do with school, I just can not believe it wil be over so soon… ANYWAY- it’s not yet!!
This cake- awesome- great reviews, especially for something different during the over-pumpkin and gingerbread-ed winter months (Yes I know, I can’t believe I just said I could get too much pumpkin!!) This cake is a great base too- I can’t wait to throw in different juices and liqueurs and the opportunities are endless!
- 1/2 Cup Olive Oil
- 1/2 Cup Apple Sauce
- 3 Cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup sugar
- 1 cup brown sugar
- 1 -1/2 Cups egg beaters
- 1 tbsp each orange, grapefruit, and lemon zest, minced
- 1/3 cup grapefruit juice
- 1/3 cup orange juice
- 1/4 cup orange liqueur
Mix everything, pour into greased and floured bundt pan. Bake for 45 min. Let cool and turn onto serving dish.
- 2 Cups powdered sugar
- 1 tbs orange liqueur
- 1 tbs (plus extra if needed) orange juice
Mix and pour over cooled cake. Enjoy!
